Shadowfax Midhill Chardonnay draws from a patch of the Midhill Vineyard in the Macedon Ranges. The patch is carefully bunch thinned to yield fruit with depth and structure.

The fruit is firmly pressed with some skin contact releasing the full flavour profile of the grapes. Natural fermentation takes place in new and seasoned French oak barrels.

The wine is left to unwind and age slowly on its lees. After about one year, it is racked and filtered prior to bottling.

Pale straw green, Shadowfax Midhill Chardonnay has white stone fruit and citrus flavours, focused acidity and pithy texture. Cellaring potential is five years.
